Ms. Bobbies Crispy Southern Fried Chicken
Ingredients
3-4 lbs chicken pieces (legs, thighs, wings, or breast strips)
2 cups self-rising flour
2 tablespoons Ms. Bobbies Chicken & Chops Fry Mix
2 large eggs
1 cup buttermilk
Vegetable or peanut oil for frying
Directions
Step 1: Prepare the Chicken
Pat chicken dry with paper towels.
Place chicken in a bowl.
Add buttermilk and eggs.
Mix well and refrigerate for at least 1 hour (overnight is even better).
Step 2: Make the Breading
In a large bowl combine:
2 cups self-rising flour
2 tablespoons Ms. Bobbies Chicken & Chops Fry Mix
Mix thoroughly.
Step 3: Bread the Chicken
Remove chicken from the buttermilk mixture.
Allow excess liquid to drip off.
Coat thoroughly in the seasoned flour.
Press flour firmly onto the chicken.
Place breaded chicken on a wire rack.
Let rest 10-15 minutes before frying.
Step 4: Fry
Heat oil to 325°F-350°F.
Carefully place chicken into hot oil.
Do not overcrowd the fryer.
Cook until golden brown and internal temperature reaches 165°F:
